Some recipes remind us that the best food doesn’t have to be complicated. This classic Spanish appetizer transforms a few simple ingredients into something unforgettable: crispy country sourdough toasted in garlic-infused olive oil, rubbed with fresh heirloom tomato, layered with savory jamón, and finished with aged Parmesan and freshly cracked black pepper.
Pan Con Tomate literally translates to “bread with tomato” in Spanish, and whether you’re looking for a light lunch, an elegant appetizer, or a way to use up leftover artisan bread, this rustic favorite is proof that great ingredients speak for themselves.
RECIPE OVERVIEW
PREP TIME:
10 Minutes
COOK TIME:
5 Minutes
TOTAL TIME:
15 Minutes
INGREDIENTS:
- 1 thick slice of country sourdough or artisan bread
- Extra virgin olive oil
- 1 garlic clove, lightly smashed
- 1 ripe heirloom tomato, halved
- Thin slices of Spanish jamón (Jamón Serrano or Jamón Ibérico)
- A wedge of aged Parmesan cheese, freshly shaved
- Freshly cracked black pepper
INSTRUCTIONS
- Pour a generous amount of extra virgin olive oil into a skillet over medium heat. Add the smashed garlic clove and gently warm the oil until fragrant. Be careful not to let the garlic brown—it should simply infuse the oil with flavor. Remove and discard the garlic.
- Place the sourdough into the hot garlic-infused oil. The oil should be hot enough that the bread sizzles immediately. Cook until both sides are golden brown and crisp. Chef’s Tip: If the oil isn’t hot enough, the bread will absorb the oil instead of crisping, resulting in a soggy slice.
- While the toast is still warm, rub the cut side of the heirloom tomato directly over the surface of the bread. The tomato acts like a natural grater, leaving behind its pulp, juice, and seeds while the skin stays in your hand.
- Arrange thin slices of Spanish jamón over the tomato-covered toast. Finish with generous shavings of aged Parmesan and a few cracks of fresh black pepper.
- Slice into smaller pieces for sharing or enjoy it just as it is. Serve immediately while the toast is still warm and crisp.
Chef’s Notes
Traditional Spanish tapas celebrate simple, high-quality ingredients. There’s no need to overcomplicate this dish—no elaborate garnishes or extra toppings. Crispy bread, ripe tomato, exceptional olive oil, and quality jamón are all you need.
Pairing Suggestions
Serve alongside:
- A crisp Spanish Albariño or Sauvignon Blanc
- Sparkling water with fresh lemon
- Marinated olives
- Roasted almonds
- A simple green salad
Storage
This dish is best enjoyed immediately after assembling. The toasted bread will gradually soften as it absorbs the tomato, so we recommend preparing only what you’ll eat right away.
