Mornings at Vista Verde start early and start with coffee, fresh-roasted in the West. Breakfast itself leans hearty: thick-cut bacon, fresh-baked pastries, seasonal fruit, and made-to-order specialties cooked to how you actually want them, not assembly-lined off a buffet line.

Once or twice a week, breakfast moves outdoors entirely for the Breakfast Ride, one of the Ranch’s signature culinary experiences. Guests saddle up in the cool morning air and ride into the mountains as the valley wakes up, arriving at the historic Homestead Cabin to the smell of fresh cowboy coffee and a spread that includes freshly baked blueberry muffins, cast-iron frittatas, and warm croissant breakfast sandwiches which are always a guest favorite. Chef Melissa, the Ranch’s pastry chef, runs this one, and it shows: this is where her baking talent gets the spotlight. You don’t have to ride to join, walking and motorized transportation options are available for anyone who’d rather skip the saddle, but not the breakfast.

Midday: Globally-Themed Lunches Between Adventures

Lunch at Vista Verde is built to refuel, not slow you down. Menus rotate through relaxed,globally-themed spreads with fresh ingredients, comforting classics, and enough variety that whether you spent the morning fly fishing the Elk River or on a trail ride, there’s something on the table that actually sounds good. It’s casual by design with the goal of getting you fueled and
back out for the afternoon’s activities.

Evening: Where the Ranch’s Culinary Program Really Shows Up

Dinner is where Vista Verde’s kitchen does its most ambitious and creative work, and the week doesn’t repeat itself. Some nights bring a lively family-style buffet. Twice a week, the dining room transforms for an adults-only formal dinner with white tablecloths, candlelight, and a multi-course tasting menu built around house-made breads, inventive amuse-bouches, and wine pairings. These formal evenings run alongside the Ranch’s Dine & Dash program, where kids have their own dinner and evening activities with counselors while parents settle into a slower, more elevated night at the table. No two formal dinners are the same, which is deliberate. It gives returning guests something new to look forward to every visit.

The Wine Program

Vista Verde’s wine list isn’t an afterthought. In fact, it’s earned a Wine Spectator Best of Award of Excellence (“two-glass” award), and it’s overseen by Executive Chef Jonathon Gillespie, a self-described “wine geek” who leads guided tastings throughout the week. The cellar mixes celebrated producers with harder-to-find bottles chosen specifically to complement Colorado West and Yampa Valley flavors. Beer, wine, and non-alcoholic beverages are always included in your stay, but the reserve list of premium wines and spirits is available for an additional charge for guests who want to go deeper.

The People Behind the Food

Vista Verde’s kitchen is led by Executive Chef & Food and Wine Director Jonathon Gillespie, trained at the Culinary Institute of America in Hyde Park and at the Ranch for more than two decades, building menus around Colorado West ingredients and partnerships with local farmers, ranchers, and producers. Chef de Cuisine Ben Barnas, whose résumé includes the James Beard-recognized Lone Pine Steakhouse in Indianapolis, brings refined technique and bold flavor to the day-to-day menu. Between the two of them (plus Chef Melissa on pastry), the kitchen has the range to run a casual waterside lunch and a candlelit five-course dinner in the same 24 hours.
