Looking for a way to get some healthy greens into your kids to power them up for school, or just need an easy weeknight recipe? Try the VVR Power Greens Salad, pair it with grilled chicken or fish and a loaf of crusty bread, and you’re all set!
Power Greens Salad (Serves 4)
Ingredients:
2 Bunches of Curly Kale, stemmed & thinly shredded
2 Bunches of Swiss Chard, stemmed & thinly shredded
2 Gala Apples, thinly sliced
3 cups cooked red quinoa
2 cloves garlic, minced
1 large shallot, minced
1 teaspoon Dijon mustard
¾ cup white balsamic vinegar
Juice of ½ lemon
2 ½ cups pure olive oil
Salt and pepper to taste
Method:
1. Make a vinaigrette by combining the garlic, shallot, Dijon, vinegar, lemon juice, and olive oil in a bowl. Season with salt and pepper.
2. In a separate larger bowl, add the remaining ingredients, toss together, add the vinaigrette, and toss again. Check for seasoning and adjust.
You may want to dress up the salad with fruit like in the photo here, or get creative with colorful additions!
