Melissa’s treats are always a crowd favorite….who doesn’t love a few extra desserts while on vacation?  These are basically a Blondie bar with all the essential s’more ingredients folded into the batter. Bake a day ahead and refrigerate overnight to make cutting easier! Recipe can easily be doubled for a party size batch.

Ingredients:
• 1 stick unsalted butter (1/2 cup)
• 2 eggs (3 eggs for more cake-like, 2 for more fudge-like)
• 1 cup light brown sugar, packed
• 1 Tbsp vanilla extract
• ½ tsp salt
• ¾ cup all-purpose flour
• ½ tsp baking powder
• 5 graham crackers, broken in bite-size pieces
• 1 cup mini marshmallows
• 1 cup dark or semi-sweet chocolate chips
• 2 Hershey’s bars, broken in pieces

Method:
Heat oven to 350, see note about pizza stone.

Line a 8×8 inch pan with aluminum foil with foil overhanging the edges, spray well.

Measure out the brown sugar, vanilla & salt into a small mixer bowl.

Melt the butter in the microwave or on the stove, pour over the brown sugar and mix with the paddle until the sugar dissolves, about 3 minutes.

Add eggs and continue to mix.

Whisk together the flour and baking powder, add to mixer and mix just until combined.

Fold in the s’mores ingredients by hand with a large rubber spatula until uniformly mixed. The batter will be stiff! Spread out in the prepared pan.

Bake 20-25 minutes until golden brown and set. Note: I have found that baking directly on a pizza stone works the best, if you have one. Pre-heat the stone in the oven at least 30 minutes.

I recommend making these a day ahead and refrigerating in order to cut nice clean slices– or serve them warm with a spoon and some vanilla ice cream!
