If you’ve been to the ranch during the Christmas season, you know what a spectacle our cookie table is at the Christmas feast! Melissa really pulls out all the stops. New this year, she’s created a fun take on a matcha cookie using browned butter and white chocolate chips dubbing them Grinch cookies. They’re sure to delight at any holiday gathering. This recipe does require a scale for the most accurate measurements.
Note: You can use white chocolate chips, red and green candies or all green food coloring for a very Grinch look for these. They do require cooled browned butter, so plan ahead or do this recipe over two days. Here is a step-by-step guide on how to brown butter if you’ve never attempted it before.
Ingredients:
- 340g butter, browned and cooled
- 150g granulated sugar
- 330g brown sugar
- 1 ½ tsp vanilla extract
- 3 whole eggs
- 375g all purpose flour
- 1 ½ tsp baking soda
- 1 ½ tsp kosher salt
- 2 Tbsp dry matcha powder
- 270g white chocolate chips or candies
- Drops green food color if desired
Directions:
- Place the butter over low heat in a stainless steel pot until melted. Set a 9×13 pan to the side. Continue to cook until it becomes foamy, then clear, then the milk solids on the bottom turn brown. Once it starts to turn color, don’t walk away – this will go from lovely brown butter to burnt in seconds! Pour the hot butter into the pan, scrape out as much of the browned bits as you can, this is where the flavor is.
- Let cool 2-3 hours, or overnight at room temperature.
- Combine the soft butter and sugars, cream until just combined
- Add eggs and vanilla, mix until just combined.
- Add a few drops of green coloring if a brighter green is desired.
- Whisk together flour, soda, matcha powder and salt.
- Add to the mixer, mix until half-way combined.
- Add chips or candies, finish mixing.
- Scoop cookies and chill overnight for best results, can be frozen until needed.
- Bake at 375 degrees for 10-12 minutes or just until the edges start to turn golden.
