If you’ve ever been out to the ranch for steak ride during the summer, you know what a treat it is to enjoy burgers and sides straight off the grill looking out at the scenic view. In this month’s recipe, our chefs are dishing on some of their steak ride barbeque secrets. This easy grilled street corn recipe is perfect for you Labor Day backyard cookouts; give it a try!
Ingredients for grilled street corn:
- Four ears of sweet corn on the cob
- Tajin to taste. If you like it spicy, you’ll want more!
- ¼ cup mayonnaise
- ½ cup chopped cilantro
- ½ cup cojita or feta cheese; more if you like
- Juice from two limes
Directions:
- Preheat grill to medium high heat.
- Using a brush or spoon, coat corn in mayonnaise. Season with Tajin to your liking.
- Place on grill, rotating to char evenly.
- Garnish with chopped cilantro (stems included) and cheese.
- Serve with a lime wedge.
- For an added crunch, and a little fun, crush hot Cheetos on top like this recipe for another version of grilled street corn.
