Oatmeal White Chocolate Craisin Cookies
½ pound unsalted butter
½ pound Crisco/shortening
2 cups brown sugar
2 cups granulated sugar
1½ tsp. vanilla extract
3 cups all-purpose flour
1 tsp. baking powder
1 tsp. salt
½ tsp. nutmeg
1 ½ tsp. cinnamon
6 cups old fashioned rolled oats
1 cup white chocolate chips
1 cup Craisins
- Cream the butter, shortening and sugars with a mixer or by hand until smooth, do not overmix.
- add the eggs and vanilla extract and scrape down the bowl, mix until incorporated, but do not over mix.
- whisk together the the flour, baking powder, salt, nutmeg and cinnamon in another bowl, add and mix until just combined. Mix in the oats, Craisins and White Chocolate chips.
- Drop onto cookie sheet and bake at 350 degrees until done, 10 minutes. Adjust time as needed for your oven. Should be just golden around the edges. Enjoy!
