These blueberry muffins are for a crowd! As you know, there can be many mouths to feed on the ranch so we need recipes that yield a lot, so invite friends over and let us know if you try them! We’d love to see how yours turn out.
Ingredients:
- 2 cups whole milk
- 1 cup sour cream
- 5 eggs
- 1 Tbsp. vanilla
- 1 1/2 cups vegetable oil
- 7 cups all purpose flour
- 2 cups sugar
- 1 1/2 Tbsp. baking powder
- 1 tsp. salt
- 3 cups frozen blueberries (we prefer the small wild frozen ones for muffins)
Directions:
- Heat oven to 350 degrees
- Whisk together the milk, sour cream, eggs, vanilla, oil, and 1 cup of the sugar
- In a 5 qt mixer bowl, paddle the flour, 1 cup sugar, baking powder and salt
- Add wet ingredients quickly, mix until flour is wet
- Add blueberries and FINISH BY HAND with a large rubber spatula, scraping down the sides of the bowl and coming up the center. It is very important that you DON’T OVERMIX muffin batter.
- Can sprinkle with brown sugar or streusel before baking
- Bake for 12 minutes, rotate, bake 5-8 minutes more until golden
Variations: try chocolate cherry, lemon poppy, or adding ground nutmeg or cinnamon.
