Matt Campbell
Matt Campbell is our artistic and talented Executive Chef. He attended the Keystone Culinary Institute where he completed an apprenticeship with Keystone Resort that is certified by the American Culinary Federation. Matt has worked in professional kitchens for the past 9 years consistently in settings from classical French, seafood specific, steak houses, upscale American cuisine and now combining classic ranch comfort food with elegant cuisine. He grew up in the country in Fayette County, Tennessee spending summers with his grandparents where he fell in love with food at a young age watching them harvest and cook fresh vegetables from the garden. Matt has called Colorado home for the past 11 years and enjoys fly fishing, hiking and backcountry snowboarding.
Lewis Georgiades
Lewis Georgiades hails from Nottingham, England. He is excited to be part of our kitchen crew and is proud to be our new Sous Chef. He is passionate about the culinary arts and the outdoors, which makes him the perfect fit here on our ranch kitchen crew. He brings a unique style to our kitchen, with immense experience in French cuisine. We are thrilled to have Lewis with us this summer for his second season!
Lisa Blashill
Lisa Blashill who is from Spokane, WA has been cooking for the past ten years. She is currently on a culinary walk-about across the country and world and on her second stop after working in Pearce, Arizona. She feels right at home in the wilderness and beauty of the Colorado mountains.
Vincent Abate
Vincent Abate is almost local—he’s from Steamboat Springs, CO. Vincent has been in culinary school at Johnson and Wales in Denver. Vincent has gained culinary experience in a couple of Steamboat’s Italian restaurants as well. He’ll be joining us for his second summer. When he’s not being a chef, Vincent enjoys skiing, working on classic cars and playing his bass guitar.
Scott Wolf
Scott is the newest addition to our fabulous team of chefs! He comes to us from California where he attended Southern California School of Culinary Arts in Pasadena. Scott has a vast amount of experience in the kitchen and is also fluent in Spanish and speaks a little Portuguese. When he is not in the kitchen preparing delicious meals you might find Scott camping, hiking, reading, playing guitar or writing music! We are glad to have Scott around to share his talent with us.
Sarah Dreyer
Sarah grew up in a military family and was homeschooled with her three siblings. Growing up in the Midwest, she discovered a passion for serving others, and she decided to pursue guest ranching to fulfill that passion. She has experience working at several other ranches In Colorado, Arizona, and Wisconsin but has found her home here at Vista Verde. This is her third season here and she is excited to be heading up the server crew again this winter.
Jessica Eck
Coming to us from the rocky Crestline, Calif, the mountainous Colorado seems to be a great fit for Jessica! Graduating high school from Packinghouse Christian Academy, Jessica has since spent time working in the food industry and dreams of one day opening her own coffee shop. When she is not in the dining room, you will probably find Jessica reading or writing. We are excited to welcome Jessica back to the Vista Verde family!
Allison Batch
Allison will be joining us from St. Paul, Minnesota where she received her Bachelor of Arts in Sociology and Sustainability from the University of Minnesota. She enjoys playing the guitar and singing as well as hiking, skiing, and canoeing. Allison has experience working at a guest ranch in Montana and enjoys the ranching lifestyle. We are excited to have Allison join us this winter.
Hannah Holcomb
Hannah hails from Portage, Michigan and is pursuing a degree in Early Childhood Education at Kalamazoo Valley Community College. She has an absolute love for kids, animals, and especially horses. Hannah loves being active outdoors; her favorite hobbies include hiking, skiing, and horseback riding.
