Vista Verde Ranch
We consider ourselves real foodies and so part of why we chose the ranch was the fact that there is an emphasis on fine food and wine.  We enjoyed all the outdoor activities, but really appreciated being able to come back to a well-prepared meal.  And we had a ball doing the wine tasting with Rob and the other guests.

While many parents join us to have some quality time with their children, there comes a time-usually quite quickly it seems- when a little adult time is quality time as well. So we structure a number of adult candlelight dinners while the younger set is in the capable care of our Kids Wranglers. What makes this possible is a tradition started some years ago called Dine and Dash. It features a nutritious and tasty (but kid friendly, e.g. no Brussels sprouts) menu. Then, while Mom and Dad are enjoying a leisurely dinner with adult conversation, the youngsters are off on a hayride or treasure hunt or to play Capture the Flag. Teens tend to toe the line between wanting to be grown up, and embracing the joys of youth. Knowing that, the teens are encouraged to join the teen wranglers for the Dine and Dash dinner and then their own set of activities. But they are also welcome to join the Adult dinner with you if they prefer.

Now our culinary institute-trained chefs are used to preparing four star cuisine. But they are quite versatile and, after all, they were youngsters once, too. So they delight in offering fare that usually ravenous young guests (not to mention the kid wrangler crew) will put away. Here is a sample Kids Dinner from a season past. Your children probably couldn't care less what's on it. But for the peace of mind of Mom and Dad, rest assured that no one goes hungry at the Vista Verde Ranch Resort!

Each night has a main entree, but here are some substitutes if our choice doesn't match your kid's tastebuds.

 

Home Made Chicken Fingers with honey mustard sauce

6 oz Certified Black Angus Burger with lettuce, tomato onion and dill pickles served on a toasted Kaiser roll

Spaghetti with red sauce topped with parmesan cheese and served with home made garlic toast

Grill Cheese

Peanut butter and jelly sandwich

Tofu Fingers Lightly breaded tofu deep fried and served with tomato basil sauce

Grilled vegetable burger with lettuce, tomato onion and dill pickles served on a toasted Kaiser roll

 

 

 

Monday- Pizza-Pizza-Pizza-Pizza-Pizza-Pizza

Tuesday-Grilled teriyaki chicken breast with white rice pilaf and vegetable of the day

Wednesday-Certified Petite beef short loin with mashed potatoes, gravy and vegetables of the day

Thursday-Kids outdoor picnic with fried chicken coleslaw, macaroni salad and water melon

Teens over night cookout with burgers, hot dogs potato salad and macaroni salad and smores over the fire.

All entrees are served with mixed green salad and choice of fresh fruit, French fries or vegetable of the day.
